Added PocketSage to Utilities Section

Adding PocketSage — a fully offline, on-device RAG assistant built with LiteRT-LM, Jetpack Compose, and Room.

What it does:

• Fully offline AI assistant using Retrieval-Augmented Generation (RAG)
• • On-device inference with LiteRT-LM (no internet required)
• • Built with modern Android stack: Jetpack Compose, Room database
• • Demonstrates clean architecture and modern Android development practices
